Identification

Is it a saffron milk cap?

Three questions, in order. Each one has to pass before the next is worth asking.

Nothing on this page is permission to eat anything. A website cannot see what you are holding. Use this to learn the features and to narrow things down, then have a real person who knows Victorian fungi look at your actual mushroom before it goes anywhere near a pan.

Gills, and does it bleed?

Look under the cap, then cut the flesh or snap a gill and wait a few seconds.

It has gills under the cap, and a milky fluid seeps from the cut. Go to step 2.

It has pores, teeth or a sponge underneath, or nothing bleeds when you damage it. Not a saffron milk cap.

Pored mushrooms are common in the same plantations — Suillus species came in with the pines too. They are a different genus entirely, and this key does not cover them.

Why this step first. Gills plus latex puts you in the genus Lactarius, and that single test does more work than any amount of cap-colour matching. Plenty of orange mushrooms grow under Victorian pines. Very few of them bleed.

What colour is the milk?

Judge the fresh drop, not the cut surface, and give it a moment to appear.

The milk is bright carrot-orange, deep orange or orange-red. Go to step 3.

The milk is white, yellow, watery or sharply acrid. Not a saffron milk cap.

Orange latex is the whole point of this step. It is unusual, it is obvious, and it is not something you have to squint at.

Pine, pits, and does it bruise green?

Three confirmations that should all agree with each other.

No pine anywhere near it, no pits on the stem, or the milk turns wine-red or purplish rather than green. Something else — stop here.

The green is meant to happen. Cut flesh, handled gills and bruised caps all go verdigris, and older specimens can come out of the ground half green already. It reads as spoilage to people who have not seen it before. It is the opposite — it is one of your confirmations.

What you'll actually meet in a Victorian plantation

Most keys for this species were written for the northern hemisphere, where the question is which Lactarius you are holding — the classic answers being L. deterrimus under spruce and L. torminosus under birch. Neither tree is planted at scale in Victoria, so neither confusion is likely here.

The saffron milk cap arrived in Australia alongside Pinus radiata, and in a radiata plantation the real question is different: not which Lactarius, but whether it is a Lactarius at all. That is what step 1 tests, and it is why the milk test carries most of the weight on this page.

Fly agaric Amanita muscaria

Toxic — the one to know

Came in with the pines just as the milk caps did, and fruits in the same plantations at the same time of year. Red to orange cap, usually with white warts, but rain strips those off and a washed, faded specimen can read as plain orange from a distance.

Tells: white gills, a ring on the stem, a swollen base sitting in a cup, and no latex whatsoever. Step 1 rules it out instantly — which is exactly why step 1 is first.

Slippery jacks Suillus spp.

Not dangerous, not this

Abundant under Victorian pines and often picked alongside milk caps. Brown, slimy-capped, and pored underneath rather than gilled.

Tells: a sponge, not gills. Step 1 separates them.

Webcaps Cortinarius spp.

Treat with real caution

A large genus, some of them orange or tawny, some seriously poisonous. They do not bleed.

Tells: no latex, rusty-brown spore print, and often a cobwebby veil across the young gills. If it does not bleed orange, it is not what you came for.

Spectacular rustgill Gymnopilus junonius

Not edible

Big, bright orange-brown, and common in Victoria — but clustered on wood, stumps and buried roots rather than scattered through needle litter.

Tells: grows on wood, bitter, no latex, rusty spore print.

On other Lactarius. Australia has native milk-cap species of its own, but they belong to native forest rather than exotic pine plantations. A gilled mushroom bleeding carrot-orange latex under radiata pine in a Victorian autumn is a narrow description, and it fits very few things.

Autumn — roughly March to June across Victoria, following steady rain once the ground has cooled.

Exotic pine plantations and pine windbreaks, in needle litter, often at the edges of tracks and firebreaks rather than deep in dense stands.
Cap
Orange with darker concentric zones, flattening then becoming funnel-shaped, margin inrolled when young. Often green-blotched with age.
Gills
Orange, running down the stem, bruising green where handled.
Stem
Orange, hollow when mature, usually with darker orange pits — the feature worth learning, because it is easy to see and hard to confuse.
Latex
Carrot-orange, not copious, turning greenish as it dries.
